Margarita Dip with Strawberries
Author: JoanieNow that summer’s here in full swing, I want to share a recipe I found that’s perfect for your summer parties. The recipe is for a Margarita Dip. I found this fabulous recipe on Pinterest and it was posted by Laura from the blog, Real Mom Kitchen. Laura said she found this recipe in her “It’s Summer” issue of Betty Crocker. I decided to make this dip for our Fourth of July get together and I have to tell you, it was a huge hit with everyone.
One of the things I love most about this dip is that it’s so easy to make ahead of time and it keeps very well in the fridge. I served my dip with strawberries as Laura suggested but I can easily see that a beautiful arrangement of sliced fruits surrounding this dip would be delightful. The Margarita Dip is creamy and light and not overly sweet. I added a bit more orange juice and more margarita drink mix because I wanted my flavors to be a bit stronger but other than that I kept the recipe the same. This is certainly a recipe for my recipe file that I will make often, especially in the summertime.
INGREDIENTS (Slightly adapted from the recipe found on the blog, Real Mom Kitchen)
1 package (8-ounces) cream cheese, softened
1/4 cup frozen (thawed) margarita drink mix. (I used the mix found in the freezer isle that comes in a 10-ounce can.)
4 tablespoons orange juice
1 teaspoon grated lime peel
1/4 cup heavy cream
whole strawberries
DIRECTIONS
Beat the cream cheese, margarita mix, orange juice and lime peel in a large bowl using an electric mixer. Mix until smooth, about 2 minutes.
In another bowl, mix the whipping cream with an electric mixer on high speed until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
Make sure it’s all mixed well and cover and refrigerate at least one hour.
Serve with strawberries or other favorite fruits.
