College Student Meals – Week 3

This is a series of College Student Meals with weekly dinner menus and complete grocery list for college student who has limited cooking skills and time.
MONDAY
EASY CHICKEN STIR FRY
Thaw 1 cup of the frozen broccoli. (This can easily be done by running warm water over it)
Heat a tablespoon of cooking oil in a large pan over a medium high heat. Add the chicken breasts. Cook for about 4 minutes each side or until there is no pink in the middle of the chicken when you cut it. Remove the chicken from the pan, slice it into strips and set aside.
Heat another tablespoon of oil in the same pan. Add 1 cup of broccoli, carrots and 2 tablespoons of teriyake sauce. Stir until the vegetables begin to soften. Add the chicken strips and cook for 2-3 minutes.
TUESDAY
TOMATO SOUP WITH TUNA SANDWICH
Open a can of Campbell’s Tomato Soup and pour into a small pot. Add one cup of water and stir until heated. Remove from heat.
Open a can of tuna. Drain the water out of the can and pour into a bowl. Mix a tablespoon of mayonnaise, a little salt and a little pepper, chop a little celery and mix in with the tuna. Toast two slices of bread. Put mustard on both slices of toast, add lettuce and tomato and spoon on the tuna. Add pickles to the sandwich if you like.
WEDNESDAY
PANCAKES
Follow the directions to make the pancakes on the Bisquick box.
Serve with fruit
THURSDAY
This recipe is from our neighbor. It sounds easy and delicious!
BUBBLE PIZZA
INGREDIENTS
1 pound ground beef
1/4 pound sliced pepperoni sausage
1 (14 ounce) can spaghetti or pizza sauce
2 (12 ounce) packages refrigerated buttermilk biscuit dough
1 1/2 cups shredded mozzarella cheese
1 cup shredded Cheddar cheese
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Grease a 9×13 inch baking dish. Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in pepperoni, and cook until browned. Drain excess fat. Stir in sauce. Remove from heat, and set aside.
Cut biscuits into quarters, and place in the bottom of baking dish. Spread meat mixture evenly over the biscuits.
Bake uncovered in preheated oven for 20 to 25 minutes. Sprinkle top with mozzarella and Cheddar cheese. Bake an additional 5 to 10 minutes, until cheese is melted. Let stand 10 minutes before serving.
FRIDAY
MACARONI HOT POT
This recipe is also from our neighbor and sounds great. We sure are lucky to have neighbors like this!!
INGREDIENTS:
1 jar spaghetti sauce
1 pound ground beef (cooked and drained)
1 package penne pasta
2 cups mozzarella cheese
Cook pasta in large pot of boiling water. Drain. Set aside. Cook ground beef in frying pan. Drain. Mix all ingredients together. Put in a large baking dish. Cook in 350 degree oven for 30 minutes
SATURDAY AND SUNDAY
Enjoy the leftovers. Friday’s meal will make quite a bit. Have a salad or fruit plate with it.
