Strawberry and White Chocolate Muffins With Streusel Topping

I also love muffins…
Not little bitty muffins, I prefer Texas sized muffins. You know, the ones that are spilling out of the cupcake liners and filled with all kinds of deliciousness.
Well, the other day I was craving a sweet little muffin like this. I wanted to enjoy it with a big cup of coffee at about 3:00 in the afternoon. I needed a real energy boost…
So I baked these moist strawberry white chocolate muffins and topped them with an incredible streusel topping. I loved the taste of the melted white chocolate alongside the sweet strawberries. They were indeed great with my 3:00 coffee and even better the next morning with my 6 AM coffee.
I also found these pretty cupcake liners from Reynolds. I love them! They’re so cheery and happy!
INGREDIENTS
1 quart strawberries, (rinsed, hulled and cut into quarters. This amounts to about 2 cups cut strawberries)
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup plus 4 tablespoons sugar
3/4 cup (1 1/2 sticks) butter, melted and cooled
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1 cup white chocolate chips
DIRECTIONS
Place the cut strawberries in a bowl and sprinkle 4 tablespoons of sugar over them. Mix well and let the strawberries sit for about 15 minutes or until the strawberries give off their juices.
In a large bowl, combine the flour, baking soda and salt; set aside.
In another large bowl, using an electric mixer, stir together the butter and the sugar for about 3 minutes. Add the eggs, vanilla and milk and mix well.
Mix in the dry ingredients.
Fold in the white chocolate chips and the strawberries.
Spoon into muffin cups and sprinkle one or two tablespoons of the streusel over each muffin.
TO MAKE THE STREUSEL TOPPING
INGREDIENTS
4 tablespoons of cold butter, cut in quarters
1/2 cup all-purpose flour
3/4 cup brown sugar
1 teaspoons cinnamon
pinch of nutmeg
1/4 teaspoon salt
Either in a food processor or by hand, mix the flour, brown sugar, cinnamon and salt together. Next, add the pieces of butter. If using a food processor, pulse until the mixture resembles crumbs. If mixing by hand, use the back of a fork to achieve this result.
PUTTING IT ALL TOGETHER
Line the muffin tins or spray them with an oil spray. Spoon in the strawberry-white chocolate muffin mix almost to the top. Spoon one or two tablespoons of streusel over the top of each muffin (depending on how much streusel you like) and pat down lightly.
Bake for 30-35 minutes
