S’mores Popcorn

To celebrate, I’ve made this batch of delicious and fun s’mores popcorn. Who doesn’t love making and eating s’mores? There’s just something deliciously special about creamy, warm marshmallows and rich, sweet chocolate sandwiched between two crunchy graham crackers. I especially love it when the warm marshmallows melt the chocolate, and if you’re really lucky, they become a delicious gooey mess.
This s’mores popcorn is all of that and more. It’s a fun dessert to make. You start out by popping the popcorn kernels and placing them in a very large bowl. Then, add the mini marshmallows and the broken graham crackers to the bowl. Mix them all together. Finally, (and this is the best part!!) drizzle the warm melted chocolate over the entire bowl and thoroughly mix it all together again. Pour out the s’mores popcorn onto a large baking sheet on the counter and wait for the chocolate to firm up. Trust me, this is the hardest part! I had quite a few nibblers around who couldn’t wait for the chocolate to harden. It didn’t bother them, the messier it was, the better. But , if you can wait until it hardens, the chocolate makes everything stick together so you get all those different tastes in one big, chunky bite.
This recipe for S’mores Popcorn takes all the flavors of s’mores and combines them in one bite. It’s quick and easy to prepare. The only problem is…
…it disappears very quickly.
INGREDIENTS
8 cups popped popcorn
2 packages of graham crackers (1/2 of a 14.4 ounce box)
4 cups mini marshmallows
1 package (10 ounce ) chocolate chips
DIRECTIONS
Pop the popcorn and place in a large bowl.
Crumble the graham crackers. Don’t use a food processor for this because it will make the crumbs too fine. You want to have pieces of graham crackers. I put several graham crackers in a ziplock bag and my daughter and I crumbled them by pounding them with our fists- it was kinda therapeutic…. we did a few crackers at a time.
Add the crumbled graham crackers and the mini marshmallows to the popcorn and mix well.
Melt the chocolate chips in the microwave. When they are melted, drizzle the chocolate over the popcorn mixture and mix again.
Pour out onto either parchment paper or greased baking sheets and spread it out. Allow the s’mores popcorn to harden, about 30 minutes.
